What I Ate Wednesday

I first heard about What I Ate Wednesday from Marlene.  I thought it would be fun to participate so on Monday I toted my camera to work to document all my eats.  If you want to play too check out Peas and Crayons for all the details!

For breakfast I had a bowl of overnight oats with chia seeds, pumpkin, craisins, raisins, a bit of almond butter and some sliced banana.  Hot Chocolate Truffle tea on the side.DSCN6655
Before lunch a coffee craving hit, so I ran for an eggnog latte.  My favourite coffee drink at this time of year!DSCN6658
Lunch was leftover quinoa and chickpea salad with roasted vegetables.  You can definitely tell that the beets are exerting their pink influence on the chick peas.DSCN6673
Afternoon snack!  A couple of Girl Guide think mint cookies along with some leftover melon and a yoghurt.DSCN6674DSCN6675
Dinner was leftover Red Lentil Soup with Lemon courtesy of 101 Cookbooks.  In leftover stage it was less soup-like but still very delicious.  I served it over brown rice with spinach and Greek yoghurt on the side.  Plus a piece of whole grain toast with goat cheese slathered on it.DSCN6677

    I love this idea.  Looks like everything was healthy and tasty!

    I had qunioa salad for lunch yesterday too!  hehe!
