What’s Cooking 02.01.2015

Before I dive into my meal plan for the week I have a question for you.  Have you seen any of the McDonalds videos on YouTube from their “Our food. Your questions.” series?  I think the videos are really interesting as McDonalds opens up about what is in their food.  And who doesn’t like Grant Imahara?  I will say that seeing the lengthy name of some of the additives in their products really brings home the idea of eating less processed foods for me.  There are 19 ingredients in their fries?  There have been times when I’ve eaten way more fast food than I’d like to admit.  Sometimes it was because it was convenient, other times it was because I didn’t have the time or the energy to plan ahead.  Thankfully I’m getting the plan ahead part down now so I don’t have to fall back on fast food.

This past week was a pretty successful week of healthy eats at home.  I thought I’d share my thoughts on what we made last week with what worked and what didn’t.Runner Leana Meal Planning

Spicy Sweet Potato and Green Rice Burrito Bowl via Cookie + Kate: Delicious and I will definitely make this again!
Herb Crusted Rack of Lamb via Food Network: Neil and I have made this so many times…the lamb is always perfect.  It feels like a fancy meal out at a restaurant yet it is deceptively simple and fast to prepare.
Spicy Kale and Coconut Stir Fry via Cookie + Kate: This recipe had Neil and I saying yum over and over.  Loved it!

Spicy Pork and Kale Soup via Bon Appetit: I added the prescribed amount of fiery, mouth numbing Sichuan peppercorns and it completely overwhelmed my palate.  Next time I would sub for a different kind of pepper or perhaps some hot pepper flakes.
Vietnamese Lemongrass Beef and Spaghetti Squash Noodle Bowl with Peanut Sauce via Half Baked Harvest: This was a miss for me.  I loved the peanut sauce but the rest of the dish just didn’t come together for me.  Perhaps we needed to marinate the beef for longer.

With cold, snowy weather in the forecast for this week I figured warm and comforting or spicy meals might hit the spot.

Saturday: Weeknight Porchetta via Bon Appetit, roasted fennel and carrots via Epicurious, baked Parmesan zucchini via Damn Delicious
Sunday: Korean Kimchi Stew with Tofu via Clean Eating
Monday: Chicken Tamale Burrito Bowls via Half Baked Harvest (with homemade enchilada sauce via Gimme Some Oven)
Tuesday: Curried Ground Shrimp and Noodles via Bon Appetit, roast baby bok choy
Wednesday: West African Peanut Soup via Cookie + Kate
Thursday: Winter Squash Carbonara with Pancetta and Sage via Bon Appetit

Lunches for the week:

Lentil Curry Bowl with Cilantro Cashew Sauce via Pinch of Yum
Roast sweet potato, cauliflower, chick peas, smoky tofu and a turmeric tahini dressing via Bon Appetit
