What’s Cooking 02.08.2015

February 8, 2015 By: Runner Leana

Where do you find your recipes these days?  Do you scroll through tried and true recipe books, do you find recipes online, or do you just make what sounds good without following a recipe at all?Cookbook Collection

I used to spend a morning pouring over cookbooks to find recipes that sounded delicious.  I’d then buy the ingredients for one or two dishes then pick up other random groceries.  Because I didn’t plan all that well I would often wind up with groceries I didn’t use.  What a waste!  These days Pinterest has made it easy to organize and keep a ton of recipes at my fingertips.  I plan for a week of meals instead of one or two and I try to make sure that we are using all of our groceries.

There were several successful dishes from last week’s eats! This Weeks Eats

1: Weeknight Porchetta via Bon Appetit, roasted fennel and carrots via Epicurious, baked Parmesan zucchini via Damn Delicious.  This pork was fantastic!  We’ll definitely make this one again, but I think the recipe was a little too time consuming for a weeknight meal.
2: Korean Kimchi Stew with Tofu via Clean Eating.  This was warm, spicy and delicious.
3: Chicken Tamale Burrito Bowls via Half Baked Harvest (with homemade enchilada sauce via Gimme Some Oven).  I’d try a different recipe for an enchilada sauce in the future, but overall this was a nice meal.  Prepping the enchilada sauce on the weekend and making the chicken in a slow cooker made this a quick and easy meal after work.
4: Winter Squash Carbonara with Pancetta and Sage via Bon Appetit.  Another winner!  Peeling and cubing the squash on the weekend was another time saver.
5: West African Peanut Soup via Cookie + Kate.  This soup was fantastic.  I highly urge you to give this recipe a try!

I still like to pull out cookbooks occasionally, but like you I now use online options (pinterest, blogs, etc) a lot more often. Thanks for linking up!

I love how organized you are! I have a zillion recipe books. Usually I just gaze at the mouthwatering pics and put the book back on the shelf.
I want to start cooking new dishes more often. I am kinda in a food rut. I look at blogs & pinterest for motivation.
