I am a little late to the party with sharing my meal plan for the week. Yesterday when I sat down to write the words started to flow regarding International Women’s Day and the fight for #50womentokona. Somehow or other combining that with my meal plan for the week didn’t seem like the right thing to do.
Lately I’ve been finding meal planning hard. Part of it has been from lacking inspiration. While I will happily eat the same breakfast every day for six months I don’t like to repeat dinner recipes on a frequent basis. Part of it has been from struggling to find meals that I know will be simple, fast and healthful during the week. I stare at Pinterest in the same way that I used to open the fridge and gaze at the contents but not know what to do with it all. There were some unexpected curve balls that came up during the week that also resulted in part of the meal plan getting tossed out the window. That being said, there were some winners out of last week’s round up of recipes:
Spanish Style Clams via Wine Spectator – we skipped the potatoes and added some diced tomatoes and saffron instead just for fun. Regardless, clams and chorizo are a winning combination!
Pasta with Tuna and Cream Sauce via David Rocco – this sauce came together really quickly and it was delicious!
Smoked Gruyere and Butternut Soup with Spicy Chickpeas via How Sweet It Is – we subbed smoked cheddar for the smoked Gruyere. I loved the subtle smoky flavour of this soup. Winner!
Monday: Kale Quinoa Power Salad with Steak via Ironman.com
Tuesday: Chorizo and White Bean Stew via Bon Appetit
Wednesday: it will be some kind of riff off of this Sriracha Chicken and Broccoli Lo Mein dish and this Shrimp and Zucchini Lo Mein dish, both via Baker By Nature. We have beef tenderloin, broccoli, sugar snap peas, zucchini, carrots…we’ll make something work!
Thursday: Sweet Potato and Green Rice Burrito Bowl via Cookie + Kate
How do you deal with meal planning when you just aren’t feeling inspired?

I know the feeling of a meal planning rut! When that happens to me I default to my super easy meal plan – pick two types of meat out of the freezer (I usually eat the same thing twice in a week), and buy at least four different vegetables at the grocery store. Then I just eat meat + veggies. Not exciting, but easy and gets me through those weeks when I lack imagination (or time).
