Last week my husband was in charge of the meal planning and grocery shopping while I was out in Canmore for spring training camp. It felt a little strange not knowing what the plan was for the week! The top dish last week that was a complete knock out was this recipe from Top Chef Boston finalist Gregory Gourdet.
Neil and I are huge Top Chef nerds. We don’t have cable so we watch a lot of old seasons of Top Chef that we buy off of iTunes. Gregory is a great chef and an ultra runner so he has a good idea of what runners and athletes need to refuel. This was a simple recipe to come together, plus it made for great leftovers for lunch the next day.
The plan for this week is:
Saturday: Chicken Piccata via Food Network, plus fusilli and zucchini on the side
Sunday: Stove Top Pork & Brown Rice One Pot Meal via Runner’s World Cookbook, but also available online here
Monday: Thai Beef Salad with Mint via Runner’s World Cookbook, but also available online here
Tuesday: Chorizo and White Bean Stew via Bon Appetit (made this a week ago and was delicious)
Wednesday: Thai Curried Butternut Squash Soup via How Sweet It Is with sautéed kale on the side
Thursday: Pasta with rotisserie chicken, pesto and cherry tomatoes (we need something super quick and easy tonight)

My question for you…Top Chef? Fan or not? If you are a fan, who has been your favourite chef? I am a huge Richard Blais fan (he’s so talented) but Fabio Vivani was a huge charmer. Love them both!
I never used to watch cooking shows (in college I had no TV!) but friends at my university in England made the Great British Bake-Off a weekly watch event in my last year. Since then, I’ve gotten hooked!
